RED TOP-Guatemala Retana
Finca Retana is a Cup of Excellence winning estate in central Antigua sitting at 1550 meters on the valley floor. They grow their coffee separated by varietal, and have a small portion planted in Yellow Bourbon. Bourbon coffees tend to ripen earlier than other cultivars, and have a very balanced flavor profile with moderate acidity when cupped with other types planted in the same plot.
This lot went through a classic washed process method. Wet-processing starts by removing the outer skin of the coffee cherry through a pulper. The coffee is then fermented in water for 8-36 hours. Fermentation will break down the fruit (mucilage) layer that clings to the coffee seed, so it can be washed off in a washing channel. Then the bean and its outer parchment layer is lastly dried in the sun on patios. The resulting cup of coffee will show a beautiful balance of sweetness and acidity.
