STELIKO-Colombia Jesus Antonio
This particular lot comes from the Nariño region of Colombia. Nariño is a mountainous region with deep chasms. Its cold temperatures make coffee grow more slowly and, as a result, produce additional sugars that lead to an exquisitely complex, sweet, and acidic cup of coffee. Jesus Antinio's farm, Hueco Lindo, sits at 1700m and is comprised of Castillo varietal.
After being harvested, the coffee went through a classic washed processing method, where the selected ripe cherries de-pulped and left in a fermentation tank for 15 hours. Once removed from the tanks, the coffee was washed and rinsed to remove any remaining mucilage around the bean. It was then dried over 20 days on African raised beds.
