THE COFFEE
This lot is made up of 136 registered smallholder farmers who collectively own 989 hectares of land. Coffee production and processing are done in an organic, socially responsible and environmentally friendly manner.
THE PROCESS
Coffee producers/farmers selectively handpick ripe cherries before delivering them for processing. The coffee is pulped in a classic pulper and fermented before being washed in clean water. Wet parchment is laid dry on raised drying beds. Workers turn and visually inspect drying parchment frequently and remove and damaged parchment. It takes about 12-14 days for the coffee to fully dry. Once dry, coffee is bagged and rests for 1-2 months before milling and preparation for export.
