THE COFFEE
Guji Highland is grown on a family owned farm, established in 2012 by the Yachisi family. The 250 hectare organic farm is situated near the town of Shakisso in the Guji Zone between 2000-2300 meters. The area is described as natural cloud forest and specializes in naturally processed coffee.
THE PROCESS
Coffee is harvested between mid October-December, where the selected ripe cherries are spread out to dry in the sun on large raised beds. As the cherries dry, they are turned by hand constantly to ensure even drying. It can take 3-4 weeks before the cherries are fully dried to optimum moisture content and are ready for shipment.
